Lentil Bolognese

Lentil Bolognese
500 grams chopped tomatoes
1 onion
2 carrots
1 cube veggie stock
150 ml red lentils
1500 ml water
salt, pepper, other seasoning
Add water and tomatoes to a pot. In a mixer chop up the carrots and onion until you have small pieces and add this to the pot. Also add the veggie stock.
Cook for 45 min - 1 hour and go back to make sure you don't need to add more water.
After an hour add the lentils and cook for another 20 minutes. Season to taste. I used salt, pepper, garlic, chili, basil and oregano.
Here is where you start working on your pasta. Cook the pasta according to the directions on the package. Let the Bolognese cook along for the added 15-20 minutes or how ever long it will take to heat the water up and cook the pasta.
Optional: mix the Bolognese with a hand blender.
Serve up and enjoy.

This is a dish I really enjoy making and eating. It's so cheap and this batch will probably serve 6-8 people I guess. It does take a while to make but it's worth it to let the carrot cook down until they almost dissolve into the pasta sause.
You can serve this with bean pasta or whole grain pasta for a slightly healtier dish but today I really felt like ordinary pasta. And as the Swede I am of course I added ketchup before eating it! ;)
