Pytt i panna - use up those leftovers!

A traditional dish here in Sweden is something called Pytt i panna. Pytt is a synonym for short, tiny and all the pieces that goes into the dish are small cubes. I means in and panna is a word for pot. So tiny pieces in a pot you might call this.

The dish is usually made with potatoes, onion, carrots and meat. It's topped with an egg and some pickled beets. I diced mine since for some reason non of my kids have apparently learned how to put dirty dishes in the dishwasher so I'm planning on eating this with a spoon but hey - who cares as long as it works right? :)

Tsay and homemade seitan Kebab as meat substitutes.
And I've also added corn and spinach which are usually not added to the dish.
I've seasoned with a barbeque spice.

I put everything potatoes, carrots and onion in a pan and cooked them for about 10 minutes. I also added some oil to the pan. The corn and meat subsitutes were added and cooked for another 10 minutes and when the potatoes were done I added the spinach for just a minute or so.

Easiest way of checking the potatoes are to simply pick out a small piece of potatoe and chew on it.

I've pickled the beets myself and they are sweet and tangy - simply amazing!
