Day 8 Another week has begun
Thoughts, ideas and a recipe-sketch below.
For breakfast I just had toast with hummus and the usual suspects.
Lunch: colorful pasta with "ham" and onions
Dinner: roasted potatoes, seitan schnitzel, vegetables and sause with roasted tomatoes
Dessert: dark chocolate
For once I will elaborate on a few things. I don't write recipes - just a guide to what you can do. I almost never use a recipe when I cook at home. Just figure out what you like and have fun discovering how to make it yours. Creating in the kitchen is in my view an form of art like painting, wood working and many more creative ways of discovering your own path.
The pasta: there are several recipes online for vegan/egg free pasta. Just go ahead and use that.
Now for the colors.
Turmeric or saffron will make the pasta yellow. Only use saffron if it's the taste you are looking for. Turmeric otherwise.
The red is from the water from when you cook red cabbage. Lots of cabbage - little water. Blend the water with a small amount of cabbage to get a deeper color.
For the little more blue/purple: just add baking powder to the cabbage water.
Green: here is a perfect way of using spinch! Just mix (frozen) spinach with water and have fun.
Go. Have fun and experiment with everything you have in the kitchen. Or use food dyes. It is completely up to you. :)
And if you don't have a pasta maker. That's ok! Just use a rolling pin and roll the dough out, fold it a few times and use a knife to cut up strands of pasta. It will not make the "perfect" strands you get from a pasta machine but sometimes I enjoy the rustic feel of pasta that comes with making your own!
Now it's time for the schnitzel.
I have no idea of how I made the seitan because I just went for it. I do know I simmered the pieces in a hearty broth. The ones I had I sliced in the middle. I made a little station with 3 different bowls.
1 with oat drink and flour to make it a little thicker
1 with flour
1 with bread crumbs. Use panko if you have it.
I dipped the seitan first in the "milk", then in the flour, back into the "milk" and finished the piece in breadcrumbs.
I do believe I did fry them up in a not that healthy amount of butter. You can use an air fryer if you like, the oven or a little less fat.
I boiled small potatoes and when they were done I put them in a colander and shaked them around a little to rougher them up a little. I added a very little amount of oil on the potatoes and also seasoning while they were still in the colander and shaked them a bit more. After that I just let the air fryer to the rest. I think I cooked them for 10 minutes at 180C.
The sause you say? I had a bottle of it already in my fridge. :)
Oh I did go shopping today. And I did great. My son asked me if I was feeling alright since I didn't buy more than I had planned. And as a matter of fact I forgot to get one item but I can do without dry yeast for the week I guess. :)
