Day 9 Adding one more

As usual: short description first. And if you are interested to know more just read my thoughts and links to recipes I've used down below.

Breakfast: smoothie
Snack: crisp bread with Country Garden Ham (seitan)
Lunch: Frank and Beans
Dinner: mashed potatoes and veggie burger
Bread: "greek" bread
Treat: Brownie Bite

My daughter came home from visiting her dad's for almost 2 weeks. It will be interesting to see what will happen to my challenge. I have given her a budget for herself. I don't know she knows what she's in for. She used 1/4 of her 2 week "food allowance" in one go! And it was for today only. This is going to get interesting.


Who of all people brings a smoothie when dropping her son off at the train station at 7:30 in the morning? And at -3C. Well of course it's me! A more sensible person would have thought of something warm to drink.

And if anyone know how to present Frank and Beans in a more attractive ?? way please let me know! 
I used the recipe from Struggle Meals as a base and made it my own. I subbed the bacon for liquid smoke (for the smoky flavor) and used vegan chorizo as the sausage. I made other alterations as well as not using that much sugar.

The Country Garden Ham in the Holiday e-book (free) is absolutely amazing! And I made some changes here as well. I used tomato paste only instead of either miso or a tomato paste + soy mix. I also used 1½ Tsp instead of 2.

I had a bread mix in my pantry so I just took a walk to get yeast and some potatoes. I made 2 loaves and I put most of it in the freezer for later so the bread don't get spoiled.

For dinner I grabbed a box from the freezer. I knew it had been there for a while. I did look at the "best before" but thought that if it doesn't smell bad I should just try it. I just used one slightly larger potato to make all this mash and I had more I couldn't finish. And the patties (burgers) were cooked in my air fryer and they tasted ok. That tomato-sauce I had yesterday - I made a new batch and added olives to this one. And a mix of vegetables to go with it all.

And I can't go to sleep without a treat. :) Black Bean Brownies of course. I used this recipe the other day but made them even smaller.
