Oats, rice and bread

 Every time I have more than 2 days off I always stay up way to late and getting up a lot later than usual. This time I had my alarm on 7:30.

As the house was quiet I grabbed my phone, picked up my headphones and got the music started. Doing a little cleaning up in the kitchen while making Steel Cut Oats with blueberries. It's so easy to make and just amazing to eat. 1 part oats, 2 parts plantbased milk and 2 parts water. Some salt, spices and then you add toppings. I tend to cook the blueberries with the oats and as can be seen it does look a little funky but there's nothing wrong with the taste. 


I just hate this time of year. So so many people out shopping for Christmas dinner, gifts and everything. And now living in a pandemic I freak out with that amount of people around. I had to stop by one store. It was in, grab what I needed and got out really fast. We did need something from a grocery store as well but opted to go to another store.

And here I was thinking that I had everything done for Christmas Eve tomorrow. Then I get a message from my daughter. She's supposed to go with her father to his wife's sister but now she's come down with a stomach flue or something. So maybe, maybe not I'll have both kids at home for tomorrow. So my son braved the outside and got more food for tomorrow.

And in all this I managed to get some food going. We had leftover rice, a few bit and pieces of both onion and bell pepper. I made some sort of fried rice but afterward you could really tell it was the wrong kind of rice. It got a little mushy but edible. The "eggs" are tofu and I added more veggies. I'm going to make more rice and use up all the tofu and veggies for a second round of fried rice. I do not mind having the same meal twice in a row. 

I refused to go back to the store to get bread and I forgot to ask my son to get some. Well then. I'll just make some. To be honest; we all know fresh, newly baked bread is the best! So I made Swedish flatbread and I love it!
